Lots of people say that when the warm weather comes it makes them want to eat better, fresher, lighter foods.

I have never experienced this phenomenon. Keep the cookies and cake coming please!

But I really, really love fresh salsa. Especially when I don’t have to make it! When Craig and I worked together, everyone would go crazy when our coworker Andy announced he was going to buy ingredients to make salsa. We would all treat him extra nice and request a tupperware or two or three.

Craig had started making fresh salsa every few weeks, and it is just fabu. And healthy! Craig is not a regular kitchen participant, but he really likes getting to use my uber Ninja blender that pulverizes anything and everything.  Here is the recipe he works off of, but we have tried a few different variations and techniques to see what we like. Sometimes he adds more jalapeno (too much!). He consistently uses less oil than called for, and he usually blends half of the ingredients because we don’t want it to be completely chunky. Typically we like it better the longer it sits and the flavors get to meld. It’s lovely and fresh and simple! Enjoy!

Salsa Fresca

Ingredients

* 4 ripe tomatoes, chopped
* 1/4 red onion, chopped
* 1 jalapeno, minced
* 8 cilantro sprigs, chopped
* 3 garlic cloves, minced
* Juice of 1 lime
* 1/4 cup olive oil
* 1/2 teaspoon salt

Directions
In a mixing bowl, combine all ingredients together. Toss thoroughly. Let stand 15 minutes before serving.

    Mmmmm I love salsa, and especially fresh. I like mine fiery hot! My mom-in-law learned our lesson one year, though with habaneros. We literally burned our skin! Have you tried any fruit salsas? I am particular to mango and peach. Oh yummm. I am so hungry!
