So to keep my brain busy and happy while it’s winter I have been coming up with some fun stuff today. Like earlier this week, I improvised on a carrot muffin recipe and it was pretty sweet. (I’ll post it at the bottom) The same day we made a big batch of corn muffins as well. Muffins are awesome =)

We are planning our Valentine’s Day crafts. Juliet already has the bug in her ear so it’s been hard to get her to save me a few pieces of red or pink paper. I think I need a separate bnk account just for arts and crafts supplies in this house.

I have been watching a lot of Food Network. And despite what she’ll tell you, Juliet loves it. I think she gets my same creative juices rush because all of a sudden she keeps coming to me with a list of ingredients asking if they would beĀ  good recipe. We tried her fruit salad. It was excellen!

I have started doing yoga a couple times a week with my friend Katie. It’s a very nice change of pace and we are really looking forward to when we can do the routines without giggling or falling over!

Wednesday night I cut Layla’s hair. I loved her long hippy hair, but it’s been getting so knotted and with all the winter static it is always stuck to her face unless I have it back in braids. So we cut it to her shoulders and now I sweep over the front and she looks all cute and vintage! I do like hair =) So Thursday we dug out the curling irons and crimpers and both the girls let me do their hair and then we took pictures! I ghetto rigged my flash with homemade diffuser, which I was quite pleased with. Someday I will have the real deal equipment, but for now I am quite happy with what I’ve got!! (It obviously works ok!)

T’s Yummy Carrot Muffins (Improvements welcomed!)

  • 2 cups flour
  • 1 cup white sugar
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1/4 tsp. salt
  • 1 1/2 cups of raw grated carrot
  • 1 apple pealed and diced
  • 1/2 cup raisins
  • 1/4 cup sweeted coconut flakes
  • 3 eggs
  • 1/2 cup applesauce
  • 1/2 cup canola oil
  • 2 tsp. vanilla

Heat oven to 350* F. Line or grease 18 muffin cups.

In large bowl whisk together flour, sugar, cinnamon, baking soda and salt. Add carrot, apple, raisins and coconut. Mix well. In medium bowl mix all wet ingredients. Combine the two bowls, and mix until combined. Spoon into muffin cups and bake for 15-20 minutes. Use center muffin as a tester.

Let sit for for 5 minutes and then tip onto wire rack to cool. Now EAT!

    I bet you could add yogurt in them instead of the oil and they would be delish. :) They already look fantastic - I’m printing the recipe as I type!
