Tonight was power baking night! Waffles for the freezer, cinnamon muffins with cherries and ooooh… dessert, dessert…. what to make for dessert?

For some reason I never really realized that a blondie recipe wasn’t the same as a cookie recipe. I sort of just assumed that a blondie was a chocolate chip cookie baked in a pan and cut square, brownie style. I am very happy to see the light now though, as I found this AAAAmazing recipe for blondies. (See below) I most definitely wished I had butterscotch chips in the house but was forced to improvise with peanut butter chips. Some sacrifice, right?

Tomorrow it’s going to rain so the girls and I will be enjoying our baked goods and making button bracelets. Geez, life is good! Go get out your mixing bowl and start whipping up some of these bad boys for your lovies!

Peanut Butter Chip Blondies

Blondies Recipe
* 1/2 cup of butter, melted
* 1 cup of tightly packed dark brown sugar
* 1 egg, lightly beaten
* 1 teaspoon of vanilla
* 1/2 teaspoon baking powder
* 1/8 teaspoon of baking soda
* Pinch of salt
* 1 cup of all-purpose flour
* 1/3 cup of butterscotch chips (or PB chips. Or choco-chips. Or nuts. Or whatever! Just remember that the blondies do taste distinctly of brown sugar!)

1 Preheat the oven to 350°F. Lightly butter and flour an 8X8 pan. Whisk together the melted butter and sugar in a bowl.
2 Add the egg and vanilla extract and whisk.
3 Add the flour, baking soda, baking powder, and salt, mix it all together. Add the butterscotch chips or other mix-ins.
4 Pour into the pan and spread evenly. Bake for 20-25 minutes or until a toothpick comes out clean. Allow to cool. Cut into squares and serve.

Makes 1 to 12ish blondies. Depending on how greedy… uh er… how many people you are sharing with =))

    oooh…and I bet mini M&Ms or Reeses Pieces would be delicious and add a satisfying crunch! I might try those!! I’ll let you know.
