I’m all for copying someone else’s work… in a very nice respectful sort of way, of course. But no matter what it is whether I’m trying to copy the shape of  a bag I saw on etsy or want to take a picture from a creative angle that I saw another photographer use,  it’s still just a copy. Especially past attempts at dishes from chain restaurants. The jalapeno alfredo from Pizzeria Uno, while good, was the wrong texture and was lacking something… Alice Springs chicken from Outback has that fantastic honey mustard that no matter how close I might get, it’s never as good as the original.

The restaurant Craig and I most miss from New Jersey would have to be Chilis. We ate there a lot, a lot, especially when I was prego with Juliet (she demanded baby back ribs!) and the nearest one in rural New York is Syracuse. After a bit of googling, we decided to try out this copycat recipe of Southwestern Egg rolls… what did we have to lose?

Copykat Southwestern Eggrolls

Holy cow! They were perfect! Yes, the recommended sauce was a tad off in texture… but the eggrolls were PERFECT! Thumbs up from me, Craig, Matt and Jenn. Also, Craig cooked in the kitchen with me! It was so much fun! Hubby is not usually one for the kitchen, but has recent inspiration via the food network. He made a marinade for some chicken, HOMEMADE salsa, and a huge pile of nachos! The girls and I made some pinkalicious cupcakes with strawberry buttercream frosting and in addition to the eggrolls we had homemade refried beans and guacamole.

Have I mentioned how pathetically full we all are? Yup, Princess Bride will help…

    Those egg rolls have a TON of ingredients - holy cow!!! Did you actually HAVE all of those on hand? (I think I most of the ingredients, but the ones I’m missing would make a HUGE difference in the recipe!) I love your pics. It looks like you guys had a great time in the kitchen together!
